Domaine Sylvain Pataille Bourgogne Aligote Les Champ Forey 2022 PET-NAT no-nothing-added ChampagneGoblet trained vines planted between 1932 and 1961, packed at 14,000 per hectare nearly half again the standard Burgundian density on gravelly limestone facing east at 250 meters. Champ Forey is one of the single site Aligots that made Sylvain Pataille's name: he farms and vinifies the grape exactly as a grower would treat Chardonnay, and works only with Aligot Dor, the golden skinned old strain rather than the high yielding Vert.
