2023 Domaine Moreau-Naudet Vaillons Chablis Premier Cru, France La Spinona Stephen Bitterolf - and youThis cuve comes from 6077 year old Chardonnay vines across four parcels within the Vaillons sector (including Schet), where shallow clays over Kimmeridgian limestone and mainly morning sun give a tense, mineral profile. Fermentation is with native yeasts and split between stainless steel (about 70%) and seasoned oak (old 228 L barrels plus a few 600 L foudres), followed by lees aging to preserve purity and texture.
